Give ordinary rice a little kick with chopped onions and jalapeño peppers. This recipe for Jalapeño Brown Rice is really easy to make, and you’ll love serving it to your family. If you’re not a fan of the heat from fresh jalapeño peppers, you can easily swap them out for no-heat pickled jalapeño peppers.

Ingredients
- 1 jalapeño pepper, seeds and ribs removed, diced
- 1 small onion, diced
- 2 teaspoons extra virgin olive oil
- 1 tablespoon minced garlic
- 2 pouches Uncle Ben’s® Ready Rice® Whole-Grain Brown Rice
- ½ teaspoon salt
- ½ teaspoon cumin
- black pepper, to taste
- 2 tablespoons lime juice
Instructions
- Microwave the rice pouches according to package directions and set aside.
- Heat a small saucepan over medium heat. Add the oil, jalapeño and onion, cooking for 4-6 minutes until the onions are translucent.
- Add the garlic and cook for an additional 1 minute.
- Add the set aside rice pouches to the pan with the salt, cumin, black pepper and lime juice. Stir to combine and serve warm.
